Conrad’s Kitchen to Open at The Model in September

The Model is delighted to announce that world-renowned Michelin Star chef, Conrad Gallagher, will open his new restaurant venture Conrad’s Kitchen at The Model this coming September.

Conrad Gallagher hails from Letterkenny, Co. Donegal and has won countless accolades over the past 20 years. He has worked in some of the world’s top hotels and restaurants including The Waldorf Astoria in New York and Monte Carlo’s Café de Paris. Conrad has also owned and operated his own restaurants such as Peacock Alley, Lloyds Brasserie, Christopher’s Brasserie, Mango Toast in Dublin and Conrad Gallagher Shaftesbury Avenue in London.

Conrad has expressed his culinary flair at high profile dinners such as the St Patrick’s Day dinner at the White House and the MTV Awards ceremonies in Frankfurt and Dublin. He boasts a celebrity client list, including Bono, Bill Clinton, Madonna, R.E.M, Mick Jagger, Enya and many more.

Conrad opened his Dublin restaurant, Salon Des Saveurs on Dublin’s Aungier St in January to critical and public acclaim. Commenting on the impending opening of his new venture at The Model, Conrad emphasised that it would bring top class food at great value prices to the North West.

Conrad also expressed his huge excitement about opening at The Model. “Sligo is a fantastic town with a unique cosmopolitan vibe. The Arts are in the DNA of everyone living here and that is brilliantly expressed through The Model. We will be capturing some of that essence in the restaurant and hope it will be an addition to what is a great scene in the North West”, said Conrad Gallagher. Conrad will spend his time equally between Dublin and Sligo.

The restaurant, to be named Conrad’s Kitchen, will feature some of Conrad’s signature dishes such as risotto of asparagus and parmesan with confit duck and parmesan foam, roasted scallops with summer butternut squash, veal shank and foie gras lollipops and crab cake with kataifi pastry with Basque-style stew of peppers, saffron aioli and pickled beetroot.

Conrad’s Kitchen will offer gourmet food at affordable prices with appetisers ranging between €6-€14 and main courses ranging between €14 and €28.

The Model’s Director, Seamus Kealy commented “Clearly we are delighted to be able to provide a gourmet experience and the exactly desired atmosphere for visitors to The Model with the announcement of our new restaurateur. Conrad’s Kitchen will enhance the visitor’s experience of The Model, and attract tourists to Sligo from all corners of the country. We anticipate that this will be the West’s restaurant to eat and be seen in. Bookings are already coming in”

Séamus Kealy also emphasised how the opening of the new restaurant aligns with the vision for The Model to develop as one of Ireland’s leading arts centres, “The combined offering of our contemporary visual art programme, the rotation of our collection exhibitions, our music programme, our education programmes for children, youth and adults, our cinema programme, our new restaurant, and the ongoing activities of our guests and tenants, means there is no place in Ireland like The Model.“

Conrad’s Kitchen is due to open at the end of September.

Lunch: 12.30 to 2.30 pm
Dinner: 5.00 – 11pm
Pre-theatre Menu: 5 – 6.30 pm

Sundays

Casual All-Day Menu: 1 – 9 pm

Closed Mondays.
